This hummus was super easy and so good! I was skeptical about leaving out the tahini. I added a bit more garlic, a tsp of black pepper, a dash of tamari, and a chopped up green onion to give it some of the flavors of my fave Moosewood recipe.

A chickpea purée without it is still quite delicious. When your hummus is smooth and ready for serving, pour it into a bowl and grab a large spoon.

- If you have a food processor or blender use that for this recipe.
- Rinse canned chickpeas set aside.
- Add garlic to blender and pulse until finely minced if not already done.
- Now add rinsed chickpeas, lemon juice salt,pepper and blend.
- Add olive oil a little at a time. You may need to add more. Add 1tsp at a time if needed.
- Blend until smooth and creamy.
- Garnish with some more oil and spices to your liking. Dip with raw vegetables or pita bread.
- Enjoy !.
Then, press the back of the spoon into the center of the hummus and rotate the bowl clockwise to create a small well. This not only elevates the presentation of the dip, but it allows a drizzle of olive oil to pool perfectly in the middle. Hummus is terrific with toasted pita bread.
